Organic yacon syrup is extracted and concentrated from the juice of these tubers. What radically distinguishes it from all other natural sweeteners is its composition: 35 to 50% fructooligosaccharides (FOS), prebiotic fibers that the body does not digest as sugar but uses to feed the good bacteria in the gut microbiota.
