Why must liposomal Vitamin C be liquid?

The principle of the liposome is to encapsulate an element (here, Vitamin C) in a nanosphere made of a double layer of phospholipids.

These phospholipids have a hydrophilic side and a hydrophobic (lipophilic) side. Since oil and water do not mix, phospholipids, when immersed in water, will mechanically form these small spheres called liposomes.

Thus, if water is removed, the phospholipids no longer have any "reason" to form spheres (liposomes). They will thus release their content, and instead of having vitamin C liposomes, one obtains a mixture of phospholipids and vitamin C.
